Spaghetti squash is a great substitute for pasta and can be served with any of your favorite pasta sauces. One of our favorite ways to eat spaghetti squash is with sun-dried tomato pesto chicken.
The first time I made spaghetti squash it was intimitading. It took a large amount of my strength to cut the squash in half and I tried to just bake the squash but it took FOREVER. Then after some trial and error I discovered the best way to cook spaghetti squash. The secret is to is to microwave the squash first and let it cook for a minute then cut it open. It makes it so much easier to cut in half and remove the seeds. Then the squash can be seasoned and baked. It tastes delicious and is healthy for you.
